Naredi ananasovo omako: V mešalniku zmeljemo 600 g ananasa🍍 z 200 g sladkorja, 100 g glukoznega sirupa, dokler gladko, toplote do 45 C, dodaj 12 g pektina🍏 in kuhamo na 85 C za vsaj 15 minut (dlje ko kuhamo, debelejšI omako🥣). Naj se ohladi in shrani v hladilniku❄️

Make Panna cotta: Add 40 g of gelatin to 600 ml of whole milk🥛 and leave it for 5 minutes. Meanwhile to 1L cream (35%) add 25 g of vanilla sugar and 75 g of regular sugar, lemon zest 🍋 (5 strips) and 1/3 teaspoon cinnamon, bring to the boil, then reduce the heat and cook for 5 minutes⏰ Add the milk and gelatin to the cream and cook for 2-3 minutes, stirring occasionally, but don’t let it boil❗️ Transfer the liquid (without the lemon zest) into a bowl and put it on another larger container, filled with very cold water🧊 Stir for 15-30 minutes and let it cool completely❕- the most important step, otherwise your Panna cotta will be stratified😒

Make pineapple sauce: In a blender grind 600 g of pineapple🍍 with 200 g of sugar and 100 g of glucose syrup until smooth, heat the mix to 45 C, add 12 g of pectin🍏 and cook at 85 C for at least 15 minutes (the more you cook, the thicker the sauce will be 🥣). Let it cool and store in a fridge❄️
